The story
Pastoralist and agrarian communities across the central Eritrean highlands crafted qwanta as an indispensable survival ration to endure harsh dry seasons and protracted journeys. Cut along the natural grain of pristine beef muscle, the strips are steeped in a concentrated dry spice cure before hanging in arid highland winds or above open kitchen hearths. Crucially, the curing relies on high-salinity capillary draw combined with the antimicrobial properties of capsicum and korarima essential oils rather than chemical nitrates.
