The story

Central to the culinary heritage of western Libyan Amazigh families and old Tripolitanian households, Reshta Imbasla is a celebratory masterpiece prepared for weddings, Eid, and child-naming ceremonies. The name 'imbasla' references the vast quantity of onions (basal) that are slowly caramelized in a spiced broth to create a rich, sweet, and savory braising topping. Unlike standard boiled pasta, the fresh flour-and-semolina dough strips are repeatedly steamed in a kiskas (couscoussier), absorbing the rising aromatics of the lamb and warming spices simmering beneath.
