The story

A foundational staple among Indo-Mauritian communities across the island, Satini Pistache is prepared almost daily to elevate humble meals of dhal, bouillon bred (greens broth), and hot faratas. While the French term 'pistache' originally referred to pistachios, colonial Mauritian Creole adopted it exclusively for groundnuts (peanuts). Traditionally pulverized on a heavy granite roche carri (curry stone) with a stone roller, this chutney achieves a rustic balance of oily richness, vegetal brightness, and searing pepper heat.
