The story

Sellou (also known regionally as sfouf or zamita) is a revered Moroccan energy confection prepared weeks in advance of the holy month of Ramadan across Arab and Amazigh households. Consumed during the pre-dawn suhoor or post-iftar tea ceremonies, it is also traditionally gifted to new mothers following childbirth to restore strength and vitality. The fundamental culinary secret lies in slowly browning pure white flour in a dry pot until it takes on a roasted hazelnut fragrance, which completely transforms the starch structure into an easily digestible, nutty powder.
