The story
In the hot, arid savannas of Gabú and Bafatá in eastern Guinea-Bissau, the fruit of the sacred baobab tree (cabaceira) is treasured as the ultimate midday reviver. Fula and Mandinka households prepare this tart, nutrient-dense drink to sustain field workers and honor arriving guests under the heat of the dry season. Unlike commercial powders, authentic Guinean preparation requires manually working whole seeded pulp pods in warm water to release natural pectin and achieve an unctuously smooth emulsion without mechanical blenders shearing the bitter inner seed coats.
