The story

Rooted in the Medina of Marrakech, this iconic bachelor dish was historically assembled by market tradesmen and craftsmen on their weekly day of rest. The seasoned amphora is sealed and delivered to the local public hammam, where the farnatchi buries it deep in the smouldering wood ashes under the heating furnace for six hours. A critical technical detail is sealing the vessel with perforated parchment rather than a tight lid, which gently regulates internal steam pressure while concentrating rich collagen.
