The story

In the vibrant tavernas of Praia and Mindelo, torresmo is the definitive petisco served alongside ice-cold Strela beer or grogue. Crioulo cooks traditionally boil the salted pork in seasoned water before frying it in its own rendered lard, which prevents the skin from toughening. The thermal shock of sprinkling a few drops of cold vinegar or lime water into the sizzling fat creates the iconic blistered, shattering crust.
