The story

In Ngazidja and Ndzuwani, daybreak is invariably marked by steaming metal kettles brewing Tsaï ya Tangawizi, served beside hot crusty baguettes or fried breads. The Comoros archipelago, famed as the Perfume Isles, produces intensely aromatic spices that infuse this daily brew with distinctive medicinal heat. Unlike lighter infusions, Comorian chai relies on hard-crushed fresh rhizomes and cracked pods simmered directly in water before the tea leaves ever touch the pot.
