The story

Tuwo Shinkafa is the quintessential daily staple across the Hausa and Fulani communities of Northern Nigeria, traditionally served alongside nutrient-dense soups like Miyan Kuka, Miyan Geda, or Miyan Kubewa. Unlike southern Nigerian cassava swallows, Tuwo is prized for its pristine white hue, ultra-soft texture, and mild sweet rice aroma. The essential technique involves intentionally overcooking high-starch short-grain rice until the grains rupture, followed by rhythmic paddle-mashing against the pot wall to create an elastic, lump-free swallow.
