The story
A quintessential everyday dinner staple among the Hausa people of southern and central Niger, particularly around Maradi and Zinder. Prepared traditionally over three-stone wood fires, it sustains farming communities through the rigorous semi-arid Sahelian seasons. The baobab leaves (kuka) are shade-dried and pulverized to preserve their high natural pectin and chlorophyll, which acts as a rich emulsifier without dulling the deep, fermented pungency of dawadawa locust bean paste.
