The story
Vindaye Poisson represents a distinct Indo-Mauritian preservation technique adapted from the Portuguese-influenced 'vindalho' traditions of Western India. In the humid tropical climate of the Mascarene Islands, frying the fish dry and coating it with turmeric, mustard paste, and vinegar allowed the dish to keep safely without refrigeration for sea voyages and island travel. Eaten cold or at room temperature alongside crusty baguette (pain maison) or rice, its pungent mustard flavor sharpens and improves after maturing for twenty-four hours.
