The story
Deep in the lush roças and coastal villages of São Tomé, palm wine—locally known as vinhu—is collected twice daily by skilled tappers who ascend oil palms (Elaeis guineensis). It forms the centerpiece of late-afternoon village gatherings known as palhabote and traditional celebratory rites. Technically, the raw sap ferments spontaneously via ambient wild yeasts within hours of tapping, demanding precise straining, clay-pot resting, and rapid consumption before acidity dominates.
