The story
Introduced to Sudan by West African Hausa migrants who settled along the Nile migration routes, agashe has transformed into an iconic late-night street food staple in Khartoum and Omdurman. Night vendors line busy streets serving skewers hot off smoking charcoal grates accompanied by raw red onion rings, fresh lime wedges, and extra chili-peanut powder. The signature crust comes from kuli-kuli powder (defatted roasted peanut paste) blended with warming spices like ginger, dried garlic, and bouillon, creating an insulating coating that traps the meat's juices during fast searing.
