Found in bustling neighborhood markets and home tea salons across Omdurman and Khartoum, Zalabia is the quintessential hospitality sweet of Sudan. Prepared spontaneously to welcome drop-in guests or served alongside rich morning milk tea (shai bi laban), these irregular golden spheres symbolize warmth and plenty. Unlike Middle Eastern versions drenched in heavy sugar syrup, Sudanese Zalabia incorporates crushed cardamom directly into a fermented batter and is finished with a dusting of confectioners' sugar.
