The story
Native to the Luo people of Western Kenya along the shores of Lake Victoria, Aliya is an ancestral preservation masterpiece served to honor community elders and respected patriarchs during festive midday gatherings. Traditionally suspended over a low-burning hearth (kendo) fueled with acacia firewood, the meat absorbs distinct phenolic smoke before curing in the equatorial sun. A vital technical secret lies in simmering the cured meat in pure water first to relax the contracted muscle fibers before introducing acid-rich tomatoes, which would otherwise harden the protein.
