The story
Originating from the semi-arid hills of Ukambani in Eastern Kenya, Muthokoi is the quintessential heritage dish of the Akamba people, celebrated at family gatherings and harvest festivals. Traditionally, the outer husks of dry white maize are manually stripped away using a heavy wooden pestle and mortar (kithii) with a splash of water, a process that dramatically improves digestibility and starch release.
