The story

Originating across urban townships in Gauteng and the Eastern Cape, amagwinya (known as vetkoek in Afrikaans) are the quintessential morning sustenance bought from roadside cast-iron cauldrons before dawn. Township street vendors masterfully regulate dough hydration to produce hollow air pockets designed to hold savoury fillings like sliced polony or curried mince. A critical technique is maintaining an unusually slack, sticky batter rather than a kneadable dough, which traps steam rapidly in hot oil for maximum expansion.
