The story

A staple of the Fon and coastal peoples of southern Benin, Amiwo (also known as Pâte Rouge) is cornmeal elevated into high celebration food. Rather than plain water, fine white maize flour is vigorously whipped into an intense base of caramelized tomatoes, crayfish powder, and chicken broth. It is traditionally paired with crispy fried or roasted seasoned chicken and fresh pepper sauce.
