The story

Adapted from wider regional coastal traditions, this staple turns bitter cassava tubers into delicate, pearlescent grains through a controlled 48-hour lactic fermentation process. The mash is traditionally squeezed in heavy lever-press bags to expel cyanogenic glycosides and starch-rich liquids before sieving and drying. The finished steamed product delivers a signature citrus-like tartness and spongy texture that cuts effortlessly through rich palm oils and crispy fried seafood.
