The story
In the highland plateau of the Fouta Djallon, the pastoralist Fula (Fulani) community relies on Bari as an indispensable morning ritual eaten at sunrise before tending cattle. Fonio (Digitaria exilis) is widely recognized as one of Africa's oldest indigenous cultivated grains, perfectly suited to the region's acidic soil and cooler mountain elevations. The cultural signature of this dish lies in combining steaming, fluffy fonio with tart, naturally soured pastoral cow milk and aromatic cultured butter (nébbam) churned directly on mountain farmsteads.
