The story

Originating among the Susu and Fula communities of coastal Basse-Guinée, Lafidi serves as a hearty dawn meal designed to sustain farmers and laborers through long hours of physical work. The dish relies on the technique of steam-infusing raw vegetables directly above the boiling rice in a layered pot or perforated steamer basket, capturing all botanical essences. Historically, the deep umami base comes from fermented African locust bean seeds (soumbara), which undergo a multi-day fungal fermentation before being sundried and pressed into potent discs.
