Ayib (Mild Fresh Crumbly Curd Cheese)
Tender, mild fresh curd cheese simmered gently from cultured buttermilk and milk, serving as the essential cooling counterpoint to fiery Ethiopian stews.
The story
Ayib is prepared in households across the Ethiopian highlands, traditionally served on the communal gebeta platter alongside spicy Doro Wat and Misir Wat during major feast days like Fasika (Easter) and Enkutatash (New Year). While it mirrors Western cottage cheese in appearance, traditional ayib is made by heating ergo (naturally soured, raw cow's milk) until the delicate curds separate under low, steady warmth without boiling. Ethiopian cooks sometimes fold in a drop of niter kibbeh or herbal aromatics to impart a silky finish that actively neutralizes capsaicin from hot berbere pepper blends.
