The story
Among Gurage and Sidama communities of southwestern Ethiopia, Bula is revered as the finest yield of the false banana tree (Enset ventricosum). It is traditionally prepared for convalescing mothers during postpartum confinement and served on auspicious morning feasts. The starch is extracted via decantation from freshly squeezed enset pulp water, yielding pure, dense amylose that coagulates rapidly into an elastic, glossy paste when heated.
