The story
Baka is a cornerstone breakfast dish among the northern Senufo and Malinké populations of Côte d'Ivoire, traditionally simmered in massive iron cauldrons at crossroads before the morning call to prayer. The porridge harnesses the natural fermentation of pearl millet paste, which imparts a complex, sourdough-like acidity balanced by raw cane sugar.
