The story
Across the verdant forest belts of southern Côte d'Ivoire among the Baoulé and Anyi peoples, bandji is collected at dawn directly from the felled or tapped inflorescences of wild oil palms (Elaeis guineensis). Consumed within hours of harvesting at village palavers and ancestral libations, the raw nectar effervesces violently with wild forest yeasts. Because freshly tapped bandji is extremely perishable and hyper-regional, traditional village hosts subtly balance morning sap batches with tart forest fruits and indigenous spices to preserve its delicate sweetness before natural fermentation turns it into harsh vinegar.
