The story

Hailing from the Littoral and West Regions of Cameroon, Beignets de Macabo are an essential late-afternoon street food relished by schoolchildren and returning workers. Street vendors grate white or red cocoyam roots on hand-perforated tins, beating the dense batter vigorously to aerate it prior to deep-frying.
