The story
Among the Beti, Fang, and Ewondo peoples of Cameroon's Center and South regions, Bobolo represents the pinnacle of cassava fermentation and daily sustenance. Cassava roots undergo anaerobic soaking in clear stream waters for several days to eliminate cyanogenic glycosides and develop a pleasant, lactic acidity. Historically, rolling the fermented paste tightly within the waxy leaves of Megaphrynium macrostachyum served as both a protective cooking vessel and an airtight packaging system that kept the food edible for weeks without refrigeration.
