Miondo (Thin Leaf-Wrapped Fermented Cassava Stick)
Slender, ribbon-thin steamed batons of fermented cassava wrapped in leaves, presenting a delicate sour companion for grilled fish.
The story
Miondo is the refined coastal sister of bobolo, created and perfected by the Duala and Sawa coastal communities along the Wouri River estuary. While utilizing the same fermented cassava base, Miondo is rolled dramatically thinner—the thickness of a finger—requiring dexterous handwork and yielding a faster-cooking, more delicate starch. Served hot directly from the steamer at beachside fish roasteries in Youpwe and Deido, unwrapping the steaming green leaf reveals an ivory, translucent carbohydrate baton tailored for scooping spicy pepper sauce.
