The story

In the lush southern savannahs of Chad, Bili-Bili is central to the agrarian life and ritual calendar of the Sara ethnic groups. Prepared in monumental earthenware jars over wood embers, it is presented during harvest thanksgiving, marriage negotiations, and ancestral libations. Brewed using malted red sorghum, its distinctive ruby tint and cloudy body are balanced by wild lactic acid bacteria native to the fermentation vessels. An indispensable technical nuance involves adding natural plant mucilage during the boil to precipitate excess proteins, creating a clean yet nutrient-dense, low-alcohol tonic.
