The story

Originating from the Sara people of Southern Chad, chakery is a cherished celebratory dessert served during baptisms, weddings, and hot Sahelian afternoons. While commonly associated with broader West African cuisine under names like thiakry, the Chadian preparation is distinct for its balanced blend of sour curdled cow's milk and concentrated sweet milk. Traditionally, pearl millet grain is rolled by hand into micro-granules before undergoing a meticulous two-stage steaming process to achieve tender grains that do not become gummy in dairy.
