The story

Hailing from the Chari-Baguirmi region along the Chari and Logone rivers, Dakar is an indispensable condiment served alongside dense sorghum or millet esh (porridge). It is primarily prepared by riverine fishing communities as an everyday seasoning paste that preserves surplus catch through deep smoking and intense acidification. Technically, the high tartaric acid in the wild tamarind not only balances rich starch but also acts as a natural curing agent that extends the relish's shelf life in semi-arid heat.
