The story
Across the vast equatorial rainforests of the Cuvette and Plateaux departments, the onset of heavy rains heralds the harvest of binkubala from the crowns of sapelli trees. Celebrated as an ecological delicacy and prized protein source among the Teke, Mbosi, and forest communities, these sun-dried and smoked larvae are traditionally reserved for festive family meals. A critical technical step handed down by Congolese cooks is the thorough double-scalding of the dried caterpillars, which leaches residual smoke bitterness while locking in their nutty, earthy savour.
