The story

Deeply rooted in the ancestral foodways of the Sherbro and Mende peoples, Bitterleaf Soup is traditionally served on Sundays and post-festive periods for its reputed digestive and restorative virtues. The key culinary challenge lies in the labor-intensive washing of the freshly shredded leaves to extract excess raw bitterness while retaining their herbal character.
