The story

Created by the Sino-Mauritian community in Port Louis, Bol Renversé is an iconic restaurant and dinner favorite beloved across the entire nation. Inspired by Cantonese chop suey techniques, the dish was uniquely adapted to local tastes with dark soy sauces and vibrant presentation. The defining technical challenge lies in packing the bowl precisely so that when inverted at the table, the fragile runny yolk remains intact at the peak of a glistening dome of sauce and rice.
