The story

Born from the Sino-Mauritian community in Port Louis Chinatown, Boulettes Chouchou are the quintessential street food savoured hot in small plastic bowls at roadside stalls. Eaten throughout the day as a comforting snack or light meal, they bridge Cantonese dim sum technique with island produce. Crucially, the grated chayote must be salted and squeezed bone-dry to prevent excess water from breaking down the tapioca starch matrix during steaming.
