The story

Cambuulo is the quintessential evening sustenance of the inter-riverine agrarian communities of southern Somalia, particularly along the Shabelle and Jubba valleys. Traditionally prepared over charcoal braziers during late afternoons, it is standard fare for communal family dinners and Friday evening gatherings. A historical detail central to its preparation is the use of saliid macsaro—an artisanal, dark-pressed unrefined sesame oil extracted using camel-driven wooden mills—which imparts a distinctive earthy pungency impossible to replicate with modern neutral oils.
