The story

Chakery (also spelled Thiakry) is a signature dessert credited to the pastoralist Fula community of The Gambia and Senegambia. It is the crowning sweet course presented to guests at festive weddings, naming ceremonies, and during Koriteh celebrations. Historically, the dish merged nomadic dairy surplus (kossam) with settled agrarian grains; the pearl millet grains are hand-rolled and pre-fermented before steaming, which yields an earthy, nutty base that contrasts the creamy, acidic dairy.
