The story
Throughout Kenya, chapati is celebrated as the undisputed centerpiece of grand festivities, prepared in monumental batches for Christmas feasts, wedding banquets, and honored weekend guests. Adapted from Indian diaspora roots along the East African railway corridor, the Kenyan chapati transformed into a uniquely flaky, rich flatbread via a signature coil-lamination method known locally as kusukuma na kukunja. A crucial technical mandate is kneading the dough with hot water and allowing an extended resting period of at least 30 minutes, which relaxes the developed gluten structure to produce remarkably tender, multi-layered rings that stay soft for days.
