Chibuku (Fermented Opaque Sorghum and Finger Millet Beer)
A creamy, effervescent, and tangy indigenous opaque beer crafted from cooked maize, malted finger millet, and red sorghum.
The story
Originating as an ancient village brew across the Zimbabwean highveld, opaque beer (hwahwa or doro rembise) is the sacred center of nhimbe communal harvest gatherings and kurova guva ancestral remembrance ceremonies. Passed around in a carved wooden gourd or clay vessel (mukombe), the drink fosters community solidarity and links the living with their ancestors. The brewing technique relies on a precise two-stage natural fermentation: initial lactic souring of cooked maize porridge, followed by enzymatic conversion and alcoholic effervescence from sprouted finger millet malt (chimera).
