The story

In rural Shona homesteads across Mashonaland, chimodho is the quintessential sunrise fuel baked alongside morning chores before fieldwork begins. Traditionally slow-baked in a heavy three-legged Dutch oven smothered with glowing mopane coals on the lid, it relies on trapped steam to develop a tender crumb without an oven. A lesser-known technical secret is scalding a portion of the cornmeal with boiling water beforehand to gelatinize the starches, ensuring the bread remains moist and cohesive without an abundance of fat.
