The story

Originating among the Bemba and Bisa peoples of Northern Zambia, chikanda is often affectionately dubbed 'African polony' due to its distinctively firm, sliceable, sausage-like texture. It is eaten as an afternoon delicacy at markets or during special communal gatherings and family celebrations. Chemically, the unique gelation depends entirely on the glucomannans in wild orchid tubers (Disa, Habenaria, or Satyrium species) reacting with alkaline soda ash to form a tight, springy hydrocolloid matrix.
