Served steaming hot on enamel plates in lively community bars and bustling bus stations, they serve as both a social finger food and a nutritious protein powerhouse. Historically, harvested larvae are immediately hand-squeezed to evacuate the gut contents, boiled in salted water, and sun-dried on reed mats, which leaves them with an intensely earthy, tea-like aroma and rich mineral taste.
