The story

Along the wide, winding reaches of the Ubangi River bordering the Congo basin, Chikwangue is the quintessential culinary accompaniment to rich forest gravies. Riverine trading caravans and fishermen relied on this labor-intensive staple because anaerobic water fermentation and leaf-wrapping preserve the starch for weeks without refrigeration. The preparation requires a critical pre-cooking step where half of the fermented dough is gelatinized over heat before being blended with raw dough, yielding an unmistakably springy, chewy texture.
