The story

Chilar is a daily morning anchor for the Makhuwa and Makonde communities living across Cabo Delgado and Nampula provinces in northern Mozambique. Farm families consume this warm, restorative bowl at sunrise before embarking on arduous fieldwork along the coastal plains. The unique tangy depth comes from traditionally sun-dried fermented cassava roots (known locally as cassava cossettes) that undergo submerged natural fermentation before being pounded into fine flour, giving the starch an unmistakable lactic profile.
