The story

Deeply ingrained in the pastoral traditions of the Fulani and Kanuri communities of Cameroon's Far North Region, Dakéré is an iconic hospitality dish served to honor guests at Eid al-Fitr and nuptial celebrations. It marries northern agro-pastoral staples: sun-ripened pearl millet rolled meticulously by hand and fermented cow's milk from zebu herds. A critical detail lies in the dual-steaming of the dried millet granules, which prevents them from dissolving into the rich, yogurt-like liquid.
