Damara Osoba (Herbal Goat Head and Bone Broth)
A deeply gelatinous, aromatic broth of charred goat head and marrow bones infused with arid wild herbs.
The story
Originating among the pastoralist Damara and Nama peoples of central and southern Namibia, Osoba is traditionally prepared immediately following the ritual slaughter of a goat. Served on frosty winter mornings or offered to recovering elders and postpartum mothers, it provides concentrated micronutrients and restorative hydration. A distinct regional nuance is the use of bitter desert herbs and the meticulous singeing of the skull over open hardwood embers to imbue the clear broth with a smoky depth.
