The story

Foraged in the sandy soils of the Omaheke and Kalahari regions by San and Herero communities, !khowa (Kalaharias leonii) emerges exclusively after late summer rains crack the dry red earth. Gatherers harvest them immediately before the intense sun desiccates the subterranean fruiting bodies. Historically, they are braised fresh in rendered tallow or butter over open coals to preserve their delicate, nutty profile without masking spices. A culinary secret is that they absorb immense moisture, requiring a dry-sear before braising liquid is introduced.
