The story

In Bamako and across the rural Fulani heartlands of Mali, degue (also known as thiakry) is the quintessential dessert offered to welcome esteemed guests and break fasting periods during Ramadan. The dish hinges on artisanal arraw—coarse millet flour rolled by hand into spherical pearls and sun-dried before steaming. The hallmark sour-sweet balance comes from blending whole cow milk yogurt with evaporated and sweetened condensed milks, which cuts the earthy, mineral intensity of the native Sahelian pearl millet grain.
