The story
Among Fulani and Dogon pastoral communities of the Mopti and Bandiagara regions, wusuwusu represents ancient Sahelian grain mastery served alongside rich okra and meat broths. Fonio grains are so minute that traditional cooks pass them through calibrated calabash sieves before triple-steaming. The technical addition of lalo (finely pulverized baobab leaf powder) is crucial: its mucilaginous pectins coat each tiny grain, preventing the fonio from compacting into a dense porridge and yielding a light, distinct couscous grain.
