The story

Dukkah, named from the Arabic verb 'dakka' meaning to pound or crush, is an elemental staple of working-class Egyptian homes and rural fellahin tables. It is traditionally served at morning breakfast alongside Baladi flatbread and pungent Extra Virgin olive oil or melted samna (ghee). Grinding the freshly toasted elements separately in a stone mortar rather than blitzing them in a blade machine prevents oil release and preserves the distinct, crunch-laden texture that defines true dukkah.
